‘Tis the season for some festive baking! Let the flour fly, and the sugar soar let’s get to baking some Christmas shortbread cookies!
This is a family recipe that is near and dear to my heart, and a dessert I would consider to be a Christmas classic. It brings back memories of my childhood where my cousins and I would hide under the dessert table and take turns sneaking out from underneath the table to sneak a few of these delicious cookies before dinner. These cookies are pretty straightforward and easy to make on your own, with friends, or with your kids; and a simple, yet tasty treat to have this holiday season. And now, without further ado let’s get started!
Ingredients:
- 1/2 cup corn starch
- 1 1/3 cup of flour
- 1 cup of butter
- 1/2 cup of icing sugar
- Decorative sprinkles
Directions:
- Preheat oven to 300F
- Sift together cornstarch and flour
- In a separate bowl, cream butter with beaters
- Beat icing sugar into the creamed butter
- Add flour mixture to butter mixture slowly with a wooden spoon (1/2 cup at a time)
- Near the end, mix with your hands and add 1/4 cup as needed to work out the bubbles.
- Make sure dough is nice and soft and not too sticky
- Using a cookie press – push out cookies onto a cookie sheet
For a quick fix without a cookie press, roll out the dough on a lightly floured board. Form a 1/2 inch thick rectangle. Cut out shapes with a cookie cutter. If you don’t have cookie cutters, use a glass or odd-shaped lid.
- Add your decorative sprinkles before placing cookies in the oven
- Bake cookies at 300F for 15 minutes
- Watch to make sure they don’t brown too much
- Once out of the oven, if they move on the cookie sheet when pushed they are ready!
- Let cool on a cookie sheet, then place on parchment paper with a paper towel over top to allow cookies to cool completely.
The great thing about this recipe is that it can be easily multiplied to make even more shortbread cookies! 😀 Also, don’t be afraid to add some food colouring to your mixture to create some even more festive looking cookies or some icing sugar to give them a snow-covered look!
These simple and delicious shortbread cookies are a Christmas staple in my household, they are easy to make, easy to decorate and make for a great add-on with a gift!
