Breakfast is hard.
Check out these breakfast ideas for the workin’ girl (or mom) to make your life a little less hectic. These few recipes are good because you can make them in bulk and totally customizable. That means you can feed them to your families all week and still have some variety day to day. These breakfast ideas are healthy and will have you and your family off to a great start every morning … just add coffee.
Let’s make it easy.
I start my day with a nespresso cappuccino (I have the original nespresso machine in red with the milk frother and the volluto pods are my favourite kind) then followed by some hot water with lemon to stay hydrated. Then just as I am running out the door I grab a few bites of breakfast and am on my way to work. I like to be prepared for the week and all of the crazy things that come up throughout it.
That is why I do everything I can on Sunday to make my week as easy as possible. Fruit salad, overnight oats and egg bites are just a few quick little recipes that keep me from skipping breakfast and still getting out the door before 8am. Check them out and try them, I swear they are easy and save you those extra minutes in the morning that every girl needs.
Fruit Salad
Simple and delicious. Personally, I prep this on Sunday night and put it in a container so I can grab this all week. I use cantaloupe, pineapple, strawberries, blueberries and raspberries because they are my favourite but it is so easy to customize to your liking. I wash cut and mix my fruit (I drizzle a tiny bit of honey and a little pineapple juice). This keeps well in the fridge for a week so it is very easy to make a huge batch and it keeps fresh all week. This makes it easy to just scoop it out as little or much as I want throughout the week. Keeping it ready to go in the fridge is great for kids and husbands too who we all know won’t eat fruit if they have to cut it and wash it themselves.
Overnight Oats
Fast and healthy. You can prep this on Sunday too if you’re like me. They are so easy and versatile. Plus it’s nice to have options in the fridge to grab in the morning when you’re trying to get out the door, wrangling a picky toddler, or just need some variety in your meals. I just use oats, chia seeds, almond butter a little bit of milk and fruit. Feel free to swap out your dairy and nut butter of choice (some people also add protein powder).
16oz mason jars are best for this, you mix all of your ingredients add the oats to a jar, put them in the fridge overnight and you can seriously grab and go.
I only let these stay in the fridge for three or four days. If you do prep these on Sunday make them your breakfast options for the earlier part of the week.
Oven Baked Egg bites
So quick and so good. I have made these a couple of different ways so try what you think works best for you. First, I baked these in small glass containers. The next few times I made them in a mini muffin pan and I prefer that. What you use to bake them in really depends on how many you want to make. I use egg whites, spinach, red peppers, ham, salt and pepper. I mix the ingredients and put them in a greased mini muffin pan. Then bake them at 325 for about 12 minutes. You can put in your favourite items (also make them as healthy as you want). These and they are so customizable for families with different eaters!
Breakfast can really be that easy! These are a few of the quick little things I do to make my week less crazy. When life/work can be so unpredictable, especially for those with full time jobs, a side hustle and a family.
