Summer is here, so it’s the perfect time to try our Mediterranean-inspired watermelon feta salad. The dish is a perfect light meal or a refreshing side for your next summer get-together! Watermelon is a fantastic seasonal ingredient with a sweet, juicy crunch. Just make sure you choose a good one! Unlike mayonnaise-based dressings, the honey-lime vinaigrette is light and refreshing (not to mention safer in the hot sun). Make as a side dish for your next barbeque or a refreshing vegetarian main.
Mediterranean-Inspired Watermelon Feta Salad
Total time: 20 minutes
Serves 6 (side salad) 2 (main dish)
Ingredients:
Dressing
- 2 tbsp honey
- Juice from one lime
- 1 tbsp extra virgin olive oil
- pinch of salt
Salad
- 8 cups cubed watermelon
- 1 English cucumber, diced
- 1/4 red onion finely diced
- 1/2 cup roughly chopped fresh mint leaves
- 1/4 fresh basil leaves, chopped
- 1/2 cup crumbled feta cheese (add more to your preference)
Optional
- Coarse salt (garnish)
Instructions:
- Mix dressing ingredients and set aside.
- In a large bowl combine the watermelon, cucumbers, onion, basil and mint.
- Toss the salad and dressing until combined. Top with feta and coarse salt (optional) when ready to serve.
Notes for making watermelon feta salad ahead:
- Mix the dressing and store it in an airtight container.
- Cut and combine the watermelon, cucumber, and onion in a large bowl. Cover until ready to use.
- Wait as long as possible before cutting the herbs.
- Combine all ingredients just before serving.
