The Forgotten Cookies

“It’s the most wonderful time of the year!” Last year I shared my family recipe for Christmas Shortbread Cookies. This year I thought I would stick with the tradition and share another family recipe and share my Nanny’s Forgotten Cookie recipe.

These cookies are a classic dessert at Christmas for my family, and the best part is they are super simple and easy to make. Not only are they super tasty, but these cookies will have you coming back for more with their crispy exterior and nice and fluffy interior! The name “forgotten cookies” actually comes from the baking process itself, you simply “forget” about the cookies and leave them in the oven overnight. Then come morning you have yourself a tray full of goodies!

These cookies are straightforward and easy to make on your own, with friends, or with your kids; and a simple, yet tasty treat to have this holiday season. And now, without further ado take a look at the recipe and directions below!

Ingredients:

  • 2 egg whites
  • 2/3 cup white sugar
  • 1 cup chocolate chips
  • 1 cup coarsely chopped peanuts
  • 1 tsp vanilla

Directions:

  • Preheat oven to 350
  • Beat egg whites until creamy
  • Add sugar gradually and beat until mixture stands in peaks
  • Stir in the chocolate chips, peanuts, and vanilla
  • Mix thoroughly, but make sure not to beat
  • Drop a teaspoon-sized dollop onto a foil-lined cookie sheet
  • Place in oven
  • Turn off the heat immediately and do not open again until the morning – these cookies are fun to watch, so make sure to turn on your oven light to watch the magic of the Forgotten Cookie

This recipe makes approximately 40-50 cookies, which is great when and if you’re going to entertain any guests this Holiday season.

Try this pretty little tip: experiment with other ingredients such as sprinkles, smarties or even try adding food colouring! These are a few ideas to try and jazz up these cookies that are sure to impress this Holiday season making them truly unforgettable! 😉
