Three Summer Salads That Are Actually Satisfying

Three Summer Salads That Are Actually Satisfying

Let’s be honest. Most salads are boring. They’re either sad piles of lettuce or drenched in dressing pretending to be healthy. Not these ones.

These summer salads are crisp, colourful, and satisfying enough to eat as a full meal. They’re easy to throw together and taste like sunshine in a bowl. No fluff. No rabbit food. Just real, good food that leaves you feeling light but full.

1. The Mediterranean Chickpea Power Bowl

This one is hearty, fresh, and packed with flavour.

What you need:

  • 1 can chickpeas, drained and rinsed

  • Cherry tomatoes, halved

  • Cucumber, chopped

  • Kalamata olives, pitted

  • Crumbled feta

  • Red onion, thinly sliced

  • Fresh parsley

  • Lemon juice, olive oil, salt, and pepper for dressing

How to make it:
Toss everything together and let it sit for ten minutes so the flavours settle. It’s even better the next day. Add grilled chicken or tuna if you want more protein.

2. Strawberry Avocado Arugula Salad

Sweet. Creamy. Peppery. This one is perfect for a summer lunch or a light dinner with a glass of rosé.

What you need:

  • Baby arugula

  • Fresh strawberries, sliced

  • Half an avocado, cubed

  • Goat cheese or feta

  • Toasted almonds or pumpkin seeds

Dressing: Olive oil, balsamic vinegar, honey, pinch of sea salt

How to make it:
Gently layer the ingredients, drizzle the dressing over, and finish with a grind of black pepper. Add grilled shrimp for a full meal.

3. Mango, Corn and Black Bean Salad

Bright and fresh with a hint of heat. This one is summer in every bite.

What you need:

  • 1 ripe mango, cubed

  • 1 cup corn (fresh, frozen, or grilled)

  • 1 can black beans, rinsed

  • Red bell pepper, diced

  • Cilantro

  • Lime juice, olive oil, chili flakes

How to make it:
Mix all ingredients and taste for balance. Serve cold. This pairs well with grilled meat or as a side for taco night.

Simple ingredients. No measuring needed. These salads are about feeling good and eating clean without overthinking it.

Let them sit in the fridge for a bit before serving. The flavours get better with time, kind of like women. ;)
