Recipes You’ll Be Glad You Know About 

I am going to share with you some delicious recipes that you are going to be so glad you know about.

These are going to be great for your friendsgivings, officegivings, and thanksgivings, of course. But these are so good that you’ll also be able to use these for your Christmas parties too. There is more than enough to keep you eating festively all month long.


Apple, Cheddar, Chicken Melts

These can be great for officegivings but are so good you’ll want them at your Halloween parties too. 

You will need the following ingredients:

  • 8 (1/2-inch-thick) slices sourdough bread (from a 9-inch round boule)
  • 4 tablespoons unsalted butter, softened
  • 4 teaspoons honey mustard
  • 2 1/2 cups shredded, cooked chicken
  • 1 1/2 cups grated cheddar cheese
  • 1 small Gala apple, cored and cut into matchsticks
  • 4 ounces Brussels sprouts (about 5), finely shredded with a knife or food processor attachment
  • 1 tablespoon lemon juice
  • Kosher salt
  • Freshly ground black pepper

Pumpkin Spice Hot Chocolate 

This is fun and tasty for the kids. Plus if you add cute mugs you’ve got a great picture for the gram. 

You will need the following ingredients:

  • 24 oz. milk chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 2 Tbsp. vanilla extract
  • 1 Tbsp. pumpkin pie spice
  • 1 gallon whole milk

Cranberry Rosemary Chicken 

All the great flavours of fall in one pan!! 

 

You will need the following ingredients:

Cranberry Rosemary Marinade

  • 1/3 cup fresh cranberries
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons coconut aminos or soy sauce
  • 2 tablespoons maple syrup
  • 3 cloves garlic
  • 1 teaspoon fresh rosemary leaves
  • 1/4 cup dry white wine

Chicken

  • 3 pounds bone-in skin-on chicken thighs about 6
  • 1 tablespoon olive oil or avocado oil
  • salt
  • 1/2 cup fresh cranberries
  • 4 sprigs fresh rosemary plus more for garnish, if desired
  • 1 tablespoon maple syrup

Pumpkin Spice Snickerdoodles

SERIOUSLY GOOD 

You will need the following ingredients:

Cookies

  • 4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cream of tartar
  • 1 teaspoon pumpkin pie spice
  • 1 cup butter 2 sticks
  • 3/4 cups granulated sugar
  • 1 cup firmly packed brown sugar light or dark
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla

Topping

  • 6 tablespoons sugar
  • 1 teaspoons cinnamon
  • 1 1/2 teaspoons pumpkin pie spice

Hot Apple Cider

Does it get any better? I love apple cider and have already picked up two litres of it from my local farmers market. But this stuff is amazing and you’ve got to try it! 

You will need the following ingredients:

  • 8 cups of water
  • 4 honeycrisp apples
  • 1 pear ( I used a Bartlett pear)
  • 1 orange, sliced
  • 1 cup of sugar
  • 4 cinnamon sticks
  • 2 tbsp mulling spices
  • 1/4 pomegranate seeds

Pumpkin Bars with Cream Cheese 

I actually can’t believe these. All of my favourite things in one spot.

Pumpkin Bars:

  • 4 eggs
  • 1 2/3 cups sugar
  • 1 cup vegetable oil
  • 1 ¾ cups pumpkin puree
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

For Cream Cheese mixture:

  • 16 oz. cream cheese-softened
  • 1 ½ Tablespoons corn starch
  • 1 /3 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs- slightly beaten

Spiced Pumpkin Soup 

Great to bring to a friendsgiving, all the tastes of fall. 

You will need the following ingredients:

  • 1 tbs olive oil
  • 1 onion (peeled and sliced)
  • 2 cloves garlic (peeled and chopped)
  • ½ tsp ground cinnamon
  • ½ tsp ground allspice
  • 2 sweet potatoes (about 400g, peeled and roughly diced)
  • 2 large carrots (about 200g, peeled and roughly diced)
  • 400 g pumpkin or squash flesh (peeled and roughly diced)
  • 1 eating apple (cored and roughly diced)
  • 1 liter vegetable stock
  • 1/2 tsp vanilla extract
  • 30 g butter
  • Pepper and salt to taste
