Peanut Salad

If you love a refreshing summer dish, this Thai-Inspired Peanut Salad is for you. Its cabbage-base is a great way to break away from boring cole-slaw in favour of something a little more fun. Make it at home for a dinner packed with fresh veggies and herbs. Or, take it to your next barbeque for an impressive side. The dressing is the real star and makes the salad tangy, a little spicy, and delicious to the very last bite. The best part? You can combine it with whatever protein you want (I recommend shrimp). Alternatively, try crispy tofu for a vegetarian option, or spicy beef if you want something more substantial.

Peanut Salad

Thai-Inspired Peanut Salad – Ingredients

Salad

  • 3 cups  red cabbage – shredded
  • 1 cup  green cabbage – shredded

  • 1/3 cup  roasted peanuts
  • 1 large  red bell pepper – sliced

  • 1 large  yellow bell pepper – sliced

  • 3 green onions – thinly sliced

  • 1 cup shredded carrots
  • 1/3 cup cilantro (or parsley) – chopped

Dressing

  • 1/2 cup  peanut butter

  • 1/4 cup lime juice

  • 1/2  tsp fish sauce

  • 2 tbsp soy sauce

  • 2 tbsp seasoned rice vinegar

  • 1 tsp toasted sesame oil
  • 2 tbsp sriracha

  • 1 tsp salt
  • 2 tbsp honey

  • 2 tbsp cilantro (or parsley) – chopped

Toppings (Optional)

  • Protein (cooked shrimp/ chicken / tofu)
  • Peanuts
  • Cilantro or parsley
  • Mango
  • Sesame seeds

 

Instructions

  1.  Blend the dressing ingredients until smooth.

  2.  In a large bowl, combine the salad ingredients. Add as much dressing as you like then toss until fully coated. If you find the cabbage too crunchy, use your hands to ‘knead’ the salad until you reach the desired texture (this also helps the dressing to penetrate the vegetables).

  3. Add your desired toppings and enjoy!

 

Overall, have fun with it and play with the dressing to make it your own! Like spicy food? Add a little more sriracha. Want some extra tang? Play with the lime juice and vinegar. Personally, I like to add a little extra fish sauce – just be careful. Fish sauce can become overpowering and ruin the dish. Remember, make small adjustments until it’s exactly the way you like! Then, note your changes for the future. No two people’s taste buds are exactly alike. However, a base recipe is a great place to start!
